As a personal trainer, I would always start by finding out the needs and wants of my clients.
So start with where you are now.
Take your measurements.
Take pictures from the front, side, and back.

You might not want to look at them and that’s the point.
It reminds you of your goal and where you want to be in the future.
In the next 30 to 60 days take pictures and measurements again.
